Abstract The objective of this study was to evaluate the influence of vitamin C (VC) on the stability of stored liposomes under different climatic conditions. Liposomal formulations containing 1 mg/mL of VC (LIP-VC) and blank formulations (LIP-B) were prepared by the reverse-phase evaporation method. After preparation, they were characterized according to their refractive index, average vesicle diameter, polydispersity index (PDI), zeta potential, pH, content, encapsulation efficiency (EE%), morphology, stability and antioxidant activity. For stability, LIP-VC and LIP-B were stored in different climatic conditions (4 °C, 25 °C and 40 °C) for 30 days. The LIP-VC presented 1.3365 refractive index, 161 nm of mean diameter, 0.231 PDI, -7.3 mV zeta potential, 3.2 pH, 19.4% EE%, spherical morphology, 1 mg/mL of VC content, and antioxidant activity of 12 and 11.4 μmol of TE/mL for the radical DPPH and ABTS+, respectively. During stability, the LIP-B stored in 40 °C showed an instability in the parameters: PDI, vesicle size and zeta potential after 15 days, while the LIP-VC remained stable in its size and PDI for 30 days. After that, it is shown that VC can be used as an antioxidant and stabilizer in liposomes to increase the stability and shelf-life of vesicles.

RESUMO: Diferentes frutos tropicais vêm sendo utilizados para o desenvolvimento de bebidas fermentadas, porém na bibliografia consultada há poucas referências sobre a produção de espumantes naturais de outras frutas diferentes da uva. Nesta perspectiva, o objetivo deste trabalho foi o desenvolvimento e a caracterização físico-química e volátil de um espumante natural de goiaba produzido pelo método champenoise. A determinação dos compostos voláteis foi realizada por cromatografia em fase gasosa acoplada a espectrometria de massas utilizando a técnica de microextração em fase sólida no headspace (HS-SPME) das amostras. Foram detectados 89 compostos voláteis, dos quais 51 foram identificados. Os ésteres foram os compostos voláteis predominantes em número, totalizando 26 compostos, seguido pelos álcoois (10), terpenos (9), cetonas (3) e ácidos (3). Compostos voláteis com possível atividade odorífera foram encontrados na bebida, dentre eles os ésteres octanoato de etila, 5-hexenoato de etila, acetato de fenetila, (E)-β-damascenona, (E)-cinamato de etila, acetato de 2-metil butila, 3-metil butanol, 3-(E)-hexenoato de etila e o 5-hexenoato de metila. O espumante natural produzido apresentou uma composição complexa de aroma frutado e floral. Além disso, a utilização do método tradicionalmente aplicado a uvas, o champenoise, proporcionou a fabricação de um espumante natural de goiaba com características físico-químicas equivalentes aos espumantes elaborados a partir de vinho.

ABSTRACT: Although different tropical fruit species have been used in the development of fermented beverages, there are only few references in the literature to the production of natural sparkling wines from fruits other than grapes. In this sense, the objective of the present research was the development and physicochemical and volatile characterization of a natural sparkling guava wine produced by the champenoise method. Volatile compounds were identified by gas chromatography coupled to mass spectrometry using the headspace solid-phase microextraction (HS-SPME) technique on samples. Eighty-nine volatile compounds were detected, of which 51 were identified. Esters were the predominant class of volatile compounds (a total of 26), followed by alcohols (10), terpenes (9), ketones (3), and acids (3). Volatile compounds with possible odoriferous activity were reported in the beverage, including ethyl octanoate, ethyl 5-hexenoate, phenethyl acetate, (E)-β-damascenone, (E)-ethyl cinnamate, 2-methyl butyl acetate, 3-methylbutanol, ethyl 3-(E)-hexenoate, and methyl 5-hexenoate. Natural sparkling guava wine produced showed a complex composition of fruity and floral aromas. Furthermore, the use of the champenoise method, traditionally applied to grapes, enabled the manufacture of a natural sparkling guava wine with physicochemical characteristics equivalent to those of sparkling wines made from grapes.

RESUMO Este trabalho foi realizado com o objetivo de avaliar a maturação fenólica e industrial de uvas da variedade Merlot produzidas na região da Campanha Gaúcha e Serra Gaúcha-RS, e avaliar a correlação entre o potencial fenólico estimado nessas uvas com a composição fenólica dos vinhos resultantes. Os resultados obtidos demonstraram que a maturação industrial e fenólica tem grande variabilidade entre os vinhedos estudados, especialmente em relação ao conteúdo de antocianinas, deixando clara a influência da localização do vinhedo nas características das uvas, bem como a influência da safra. O grau de maturação da uva, analisado através da %IMC, influencia no conteúdo de compostos fenólicos totais e taninos encontrados nos vinhos resultantes. A análise do potencial fenólico das uvas está correlacionada ao conteúdo de polifenóis, à porcentagem da cor devido a pigmentos poliméricos e à quantidade de procianidinas presentes nos vinhos resultantes, sendo assim uma ferramenta útil para a tomada de decisão do melhor momento da colheita. A intensidade de cor, o conteúdo de antocianinas e a porcentagem de cor devido a antocianinas poliméricas nos vinhos, juntamente com o teor de polifenóis totais na uva foram os principais parâmetros que diferenciaram as uvas e os vinhos estudados.

ABSTRACT This study was carried out in order to evaluate the phenolic and industrial ripeness of Merlot grapes produced in the “Campanha Gaúcha” and “Serra Gaúcha” regions, RS, and evaluate the correlation, if any, between the phenolic potential estimated in Merlot grapes and the phenolic composition of the resulting wines. The results showed that the industrial and the phenolic maturity had a great variability among the vineyards studied; the grape ripeness degree, analyzed by %IMC, has an influence in the amount of total phenols and tannins in the resulting wine. The analysis of grape phenolic’s potential is related to the content of polyphenols, the percentage of color due to polymeric pigments and the procyanidins content in the future wines, making it a useful tool for the decision of the best time of harvest. The color intensity, the anthocyanin content and the percentage of color due polymeric anthocaynins in the wines and the grape total phenolic content were the main parameters that allowed to distinguish the wines and grapes studied.

The use of fruit industrial waste in the processing new foods represents an important new step for the food industry. This study aimed to develop cookie recipes using different amounts of guava peel flour (GPF) levels (30%, 50%, and 70%) to evaluate the proximate composition, and the phenolic compound, lycopene, and β-carotene levels in the cookies and flour and to evaluate the cookie sensory acceptance. The results demonstrated low moisture, lipid and carbohydrate contents in the flour and cookies. GPF was considered rich in fiber, ash, polyphenols, and β-carotene. The sensory analysis showed satisfactory acceptance of the cookies containing 30% GPF regarding the aroma, flavor, and texture attributes. The cookies containing 50% and 70% GPF received satisfactory acceptance regarding to aroma only. In conclusion, GPF can be used to partially replace wheat flour in the preparation of cookies to improve the nutritional quality without affecting the product sensory quality.

A proposta deste estudo foi desenvolver e avaliar as características nutricionais, físicas e sensoriais de um biscoito, elaborado com substituição parcial da farinha de trigo por farinha de quinoa, além de analisar as características nutricionais das farinhas de trigo e quinoa. Foram elaboradas formulações de biscoito padrão (100% de farinha de trigo) e com substituição de farinha de trigo nas concentrações de 10%, 20% e 30% de farinha de quinoa. Os biscoitos foram avaliados quanto aos parâmetros químicos, físicos e de textura, além de atributos sensoriais. As farinhas foram avaliadas quanto à composição centesimal. Os atributos de diâmetro, espessura, fator de expansão, volume específico, rendimento e dureza mostraram-se bastante similares entre o biscoito padrão e as formulações com farinha de quinoa, o que indicou que a farinha de quinoa é bem incorporada à massa dos biscoitos. Conforme se aumentou a concentração, de 10 até 30% de farinha de quinoa, os biscoitos apresentaram maior maciez. Note-se que a nota no teste de aceitabilidade para todos os atributos variou entre seis e sete, não diferindo entre as formulações, indicando que a adição de até 30% de farinha de quinoa não altera as características sensoriais do biscoito. Assim, a substituição parcial de farinha de trigo por farinha de quinoa incrementou o valor nutricional dos biscoitos. A composição centesimal da farinha mostrou que a quinoa apresenta maiores teores de proteína, lipídios, fibras e cinzas, em comparação ao trigo.

The purpose of this study was to develop and evaluate the nutritional, physical and sensory characteristics of a cookie made with partial replacement of the wheat flour by quinoa flour, and to analyze the nutritional characteristics of the wheat and quinoa flours. Formulations were drawn up of a biscuit with 100% of wheat flour and with replacement of the wheat flour by quinoa flour at concentrations of 10%, 20% and 30%. The cookies were evaluated with respect to their chemical, physical and texture parameters and sensory attributes, and the flours for their proximate composition. The attributes of diameter, thickness, spreading factor, specific volume, hardness and yield were quite similar between the standard cookie and the formulations with quinoa flour, indicating that the quinoa flour was well incorporated into the biscuit dough. As the concentration increased from 10 to 30% of quinoa flour, the hardness of the cookies decreased, and the score in the acceptability test for all the attributes ranged between six and seven. There was no difference between the formulations showing that the addition of up to 30% quinoa flour did not change the sensory characteristics of the cookies. Thus, the partial replacement of wheat flour by quinoa flour increased the nutritional value of the cookies. The chemical composition of the flours showed that the quinoa flour presented higher protein, fat, fibre and ash contents than the wheat flour.

In Brazil, the grape and wine production takes place mainly in the state of Rio Grande do Sul, and the region "Serra" is known as the traditional wine region. In the last years, new areas have emerged, with emphasis for the Campanha region; the red wines from this region have low acidity, little color intensity, and are wines to drink while young, even when produced from grape varieties such as Merlot and Cabernet Sauvignon. The objective of this study was to evaluate the influence of different maceration types on the phenolic compounds of Merlot wines made with grapes produced in two regions of Rio Grande do Sul, Serra and Campanha, as well as to identify the key differences between the wines produced. The localization of the vineyards seems to have more influence on the wine characteristics than the maceration type. The color due copigmentation was an important aspect in the wines made with short maceration. The effect of extended maceration was different than the expected for the Campanha region wines; the extended maceration increased the extraction of tannins resulting in greater color intensity and a greater amount of anthocyanins. The pH control seems to be a key factor for the Campanha region wines.

Vinhos tintos com altos valores de pH são resultantes de uvas com valores excessivos de potássio. O excesso de potássio é, geralmente, resultado, do manejo inadequado no vinhedo. Com o intuito de encontrar uma solução tecnológica para o problema de pH nos mostos antes e durante da aplicação de medidas no vinhedo, foram realizadas vinificações em escala piloto com uvas Cabernet Sauvignon adicionando-se ácido tartárico no momento do esmagamento. Assim, três tratamentos, em duplicata, foram feitos com a adição de zero (testemunha), 1 e 2gL-1 de ácido tartárico. Foram utilizados os procedimentos normais de sulfitagem, uso de enzimas pectinolíticas e leveduras selecionadas. A descuba foi realizada após 10 dias e a fermentação malolática foi espontânea. Foram analisados potássio (por fotometria de chama), acidez titulável (por titulometria) e pH (por peagâmetro) no mosto durante a fermentação e no vinho resultante. Potássio foi também analisado nas películas e nas borras submetidas, no entanto, a digestão nitroperclórica antes da análise. Os valores encontrados para potássio (gL-1), acidez titulável (g%) e pH durante a microvinificação foram, respectivamente, na amostra testemunha: 1,98, 0,61, 3,68; tratamento 1: 1,72, 0,70 e 3,63; tratamento 2: 1,41, 0,73 e 3,50. A análise de potássio, nas películas e nas borras nos diferentes tratamentos, apresentou os seguintes valores, respectivamente, para a amostra testemunha em g kg-1 (Matéria Seca): 24,91 e 69.30; tratamento 1: 21,85 e 75.11; tratamento 2: 16,20 e 85.38. A ação do ácido tartárico torna-se mais evidente nas borras, em que quanto maior foi a adição de ácido no mosto maior foi a quantidade de potássio encontrada nestas, reduzindo, desse modo, a quantidade de potássio no vinho. Salienta-se que a adição de ácido tartárico é um paliativo momentâneo e a verdadeira correção deve ser feita no vinhedo, por meio de um manejo adequado.

Wines with high pH values are usually made from grapes with high potassium values and can bring serious problems to the wine. This high potassium comes, usually, from mistakes with the vines management. While the right management has being tried, in the vineyard, and aiming to find a fast solution for the problem inside the winery a pilot scale fermentation was made with Cabernet Sauvignon. The must was submitted to three different treatments with tartaric acid: zero, 1gL-1 and 2gL-1,all in duplicate. The pattern of fermentation was the normal SO2, pectinolitic enzymes and yeasts addition to the musts; skins and seeds were removed from the must after 10 days of fermentation and malolactic fermentation occurred spontaneously. Potassium (by flame spectrometry), total acidity (by titulometry) and pH (by pH meter) were analyzed in the musts during fermentation and in the wines; skins and lees were digested previously the analysis. Values found, in the wines, for potassium (gL-1), total acidity (g%) and pH were respectively: samples from zero tartaric acid 1,98, 0.61, 3,68; from 1gL-1:1,72, 0.70 e 3,63; from 2gL-1:1,41, 0,73 e 3,50. Values found in the skins and lees with the same treatments were, respectively: 24,91 and 69.30, 21,85 and 75.11, 16,20 and 85.38g kg-1 of the Dry Matter. The effect of tartaric acid addition was noted mainly in the lees (69.3, 75.11 and 85.38), in which the potassium found showed a close relationship with the acid added in the must. It should be noted, though, that this addition is just for the moment because the real correction should be made in the vineyard, as it is now.

Os folatos compõem uma classe de vitaminas redescoberta nas últimas décadas pela sua importante associação com diversas funções, nos vários processos metabólicos no organismo humano. As principais fontes descritas na literatura são os vegetais, os cereais e as leveduras. Objetivou-se quantificar o 5-metiltetrahidrofolato (5-metilTFH) em vinhos durante o processamento e conservação. Foram coletadas amostras de vinhos tintos das variedades viníferas Cabernet Sauvignon, Merlot e Pinot noir, e das não viníferas Isabel (tinta) e Niágara (branca) na colheita, no final da fermentação alcoólica, e maloláctica e seguindo-se aos 4, 7, 12 e 24 meses de conservação a partir do início da fermentação. A técnica de Cromatografia Líquida de Alta Eficiência (CLAE) foi utilizada para a separação, identificação e quantificação. Os resultados mostraram que os níveis de 5-metil-THF aumentaram consideravelmente durante a fermentação alcoólica e continuaram aumentando até o término da fermentação maloláctica. Os níveis mantiveram-se estáveis durante um período de 3 a 6 meses para o vinho branco e de 1 a 2 anos para os vinhos tintos, dependendo da variedade. Os vinhos tintos de viníferas se mostraram uma boa fonte de 5-metilTHF.

Folates are a class of vitamins that have been rediscovered in recent decades because of their association with various metabolic processes in the human organism. The main sources of folates described the scientific literature are vegetables, cereals and yeasts. The purpose of this study was to quantify 5-methyltetrahydrofolate (5-methyl-THF) in wines during wine production and aging. Red wines made from Cabernet Sauvignon, Merlot, and Pinot Noir wine grape varieties, and from Isabel (red) and Niagara (white) non-wine grape varieties were analyzed. The samples were analyzed at the beginning of fermentation, at the end of alcoholic and malolactic fermentation, and periodically at 4, 7, 12 and 24 months of age. High Performance Liquid Cromatography was used to separate, identify and quantify the folates. The results showed that the levels of 5-methyl-THF increased considerably during fermentation and continued to increase until the end of malolactic fermentation. The levels remained stable over a period of 3 to 6 months in the white wines and for 1 to 2 years in red wines, depending on the variety. The red wines proved to be a good source of 5-methyl-THF.

O objetivo deste trabalho foi acompanhar a evolução da absorção de potássio pelas uvas durante o processo de maturação e verificar sua influência no pH, bem como tentar correlacionar ambas com os teores encontrados nos pecíolos na época da floração. Amostras das uvas foram coletadas durante o processo de maturação de três variedades: Pinot noir, Cabernet Sauvignon e Merlot. Durante os dois anos de estudo, ocorreram variações nos teores de potássio absorvidos pelos frutos durante a maturação, sendo o aumento acompanhado pela elevação do pH; a redução no teor de potássio foi acompanhada pela estabilização dos valores de pH, fato também influenciado pela queda nos teores de acidez titulável. Sugere-se, assim, que os altos valores de pH encontrados nos vinhos elaborados com uvas destes vinhedos, em anos anteriores, estão relacionados com a absorção de potássio e a diminuição da acidez total durante a maturação da uva. A retirada de amostras peciolares na floração e trinta dias após mostrou-se um mecanismo eficiente na avaliação do teor de potássio nos tecidos próximos aos grãos. Dessa forma, a análise peciolar, além de ser utilizada para monitorar os níveis de potássio na planta e avaliar a necessidade de adubações e tratos culturais, pode servir de diagnóstico futuro para os teores de potássio nas uvas e nos vinhos.

Grapes from three Vitis vinifera varieties (Pinot Noir, Cabernet Sauvignon and Merlot) were analyzed over a two-year period to determine their potassium content, aiming to monitor this mineral content during the ripening process and evaluate its influence on pH values. Grape samples were harvested periodically during the berries’ development until their harvest. As expected, the grapes’ potassium content showed variations, i.e., high potassium content went hand-in-hand with increased pH values while low potassium content led to stabilized pH; this process was also affected by the decline in total acidity. This finding confirms that high pH values, low titrable acidity and potassium are correlated. In addition, the analysis of petiole samples (collected during inflorescence and 30 days later) proved to be an efficient tool not only for monitoring the potassium content in winegrapes but also for evaluating the need for soil amendments involving this mineral. The potassium content in petioles and in winegrapes was found to be directly correlated; therefore, this method may be useful in future diagnoses of the potassium content in grapes and wines.
